Honey🍯 lavender

A floral, refreshing lemonade sweetened entirely with lavender-infused honey syrup. Perfect for a warm summer afternoon and a beautiful way to showcase the magic that happens when bees visit lavender fields.

Method

  1. 1

    Make the lavender honey syrup

Combine honey, water, and dried lavender in a small saucepan over medium heat. Stir until honey dissolves, then bring just to a simmer. Remove from heat and let steep for 15 minutes.

πŸ’‘ Don't boil β€” high heat degrades honey's delicate floral compounds.

  2. 2

    Strain and cool

Strain the syrup through a fine mesh sieve to remove lavender buds. Allow to cool completely.

πŸ’‘ Syrup keeps in the fridge for up to 2 weeks.
  3. 3

    Mix the lemonade

In a large pitcher, combine fresh lemon juice and cold water. Add honey lavender syrup to taste, starting with half and adjusting from there.

  4. 4

    Serve

Pour over ice and garnish with a lemon slice and a fresh lavender sprig. Serve immediately.
