Honey-Roasted Carrots with Fresh Thyme
Simple ingredients transformed by the oven into something deeply caramelized and satisfying. Raw honey and fresh thyme turn humble carrots into an elegant side dish worthy of any table β holiday feast or quiet weeknight.

Preheat and prep
Preheat oven to 425Β°F. Peel carrots and halve lengthwise (quarter if large). If using small carrots, leave whole.

Toss
In a large bowl, toss carrots with honey, olive oil, smashed garlic, thyme sprigs, salt, and pepper until evenly coated.

Roast
Spread in a single layer on a rimmed baking sheet. Roast for 25β30 minutes, flipping once halfway through, until caramelized and tender.
