Honey Almond Olive Oil Cake
A rustic, Italian-inspired cake that is tender, fragrant, and not too sweet. Olive oil keeps it impossibly moist, while a drizzle of warm honey over the top creates a glistening, slightly sticky glaze that's completely irresistible.

Prep
Preheat oven to 350Β°F. Grease a 9" round cake pan and line the bottom with parchment.

Mix dry ingredients
Whisk together all-purpose flour, almond flour, baking powder, and salt in a bowl.

Mix wet ingredients
In a large bowl, beat eggs and honey together until pale and slightly thickened, about 2 minutes. Whisk in olive oil, milk, and lemon zest.

Combine and pour
Fold dry ingredients into wet until just combined β don't overmix. Pour into the prepared pan and scatter sliced almonds over the top.

Bake for 35β40 minutes until golden and a toothpick inserted in the center comes out clean.

Glaze and serve
While still warm, drizzle with 2 tablespoons of warmed honey. Serve warm or at room temperature.
